Chicken Shawarma

What to do when you have some left over chicken breast? You could make a delicious shawarma at home. Thats what I tried when I had some left over chicken breast and was thinking what to cook and suddenly this idea popped up. I thought why not and prepared the below recipe and it turned out to be a good one.

Ingredients:

To make the roll:

Maida – 1 cup

Wheat Flour – 1 cup

Oil – 2 spoons

Salt – to taste

Water – 1 cup

For the chicken marinade:

Chicken breast piece – 1

Chilli powder – 3 spoons

Ginger Garlic paste – 1 spoon

Lemon – half

Curd/Yogurt – 2 spoons

Oil – 1 spoon

Corn flour – 1 spoon

Salt – to taste

For the chicken stuffing:

Onion – 1 (big)

Tomato – 1 (big)

Cucumber – half

Ginger – half an inch

Garlic – 3-4 pods

Green Chilli – 2

Lemon – half

Cheese Spread – 3 spoons

Mayonnaise – 2 spoons

Step 1: Clean the chicken and mix all the ingredients for the marinade, cover and keep for an hour or 2. Place the chicken in the Grill for about 20-30 mins turning over every 5 mins. Once the chicken is nicely grilled, take it out. After its cooled down, cut or shred into smaller pieces.

Step 2: Mix all the ingredients needed for the roll and make a smooth dough. Add water little by little so that the dough would come out smooth. I used half maida and half wheat but you could the combinations you need, if you prefer fully wheat or fully maida also you could make the roll accordingly. There is no strict rule to any of the ingredients, you could customise on the needs and requirements of each family. (you could start preparing the dough after the marination so that both dough and marinade can be set for an hour)

Step 3: I usually do things in parallel, once I kept the chicken in the grill I cut all the ingredients and keep it aside. Chop onion, tomato, cucumber, ginger, garlic and chilli into fine pieces. You could also use mint or coriander based on your liking. Add the mayonnaise and cheese spread and give it a good mix.

Step 4: Once the chicken is cut into small pieces, mix it with the prepared stuffing. Season it with the required salt and lemon (Lemon is something I didn’t add initially but my husband did a taste test and said lemon is the only one missing for the shawarma stuffing and I religiously followed his advice which turned out to be good! )

Step 5: Start preparing the roll with the kneaded dough. Before starting the rolls, knead the dough for a good 2-3 mins so that it becomes softer. Try to make a thinner roll so that the shawarma doesn’t end chewy.

Step 6: Place the chicken stuffing inside the prepared roll and toast it for a minute on both sides. Cut the roll into two and enjoy the shawarma!

If you don’t prefer chicken, you could try this with multiple other options like potato, paneer, mushroom, mixed vegetables etc. It follows the same steps and instead of chicken, marinade what you prefer and grill it and it would taste good 🙂
